While auto-brewery syndrome does exist, it is a rare condition. Essentially, the syndrome is when an individual’s body ferments alcohol. This happens when yeast within a person’s gut produces ethanol. Then, a person who has auto-brewery syndrome can appear and feel drunk, without ever consuming an alcoholic beverage. Some research also points to diets high in carbohydrates such as white bread, white rice, pastas, high fructose corn syrup, and desserts being contributing factors.
